pink lamingtons




She has pestered incessantly for the last few weeks. Pottering through Mumma's books an image was found, an idea formed and the constant chatter about them began in an effort to wear down my sensibilities. It worked.

Even though all my knowledge of wholefoods and sugar was nudging me incredulously, I silenced them all with a, "Today...what's the harm?!"

With gay abandon we swam cubes of buttery sponge into a luscious pool of raspberry jelly and rolled them merrily amongst snowflakes. They will certainly not take out any food styling awards, nor did the globules of set jelly clinging to squashed cake do much for my appetite, but my girl adored it all.

  4. I know how you feel about the wholefood and sugar part. I do my best to swap all flour for spelt and all sugar for rapadura. Maybe we could come up with a spelt buttercake and raspberry icing. Or cochineal. Hmmm. You've just given me an urge to make lamingtons.
    Sometimes I crack too with the "what's the harm". It doesn't happen very often and I think it's more appreciated because it's seen as an extra special, lucky treat.

  8. What a lovely thing to do together. I think a healthy balance is fine. It's fun to be able to share a special treat...I can't wait for days in the kitchen with Saskia x (Love how little hands look so delicate and clumsy all at once)
